
This White Bean Salad is a perfect vegetarian substitute for tuna salad and it is so versatile. You can use it as a dip with crackers or crudite, spread it on toasted sourdough bread, or add it to a wrap with fresh greens for an easy meal. I made this version with mayonnaise but you could easily swap that for Greek yogurt for a lighter version. If you’d like to make it vegan, simply swap in vegan mayonnaise.

White Bean Salad
Ingredients
- 1 can (15.5 oz) cannellini or great northern beans, drained and rinsed
- 1/4 cup celery, chopped
- 1/4 cup apple, diced
- 2 Tbsp red onion, diced
- 2 Tbsp zucchini pickles, diced
- 2 Tbsp mayonnaise
- 2 tsp dijon
- 2 tsp fresh dill
- kosher salt and pepper
Directions
- In a medium bowl, combine all ingredients and gently stir to combine. Season with salt and pepper to taste.
- Serve room temperature or chilled.
