Citrus Orzo Salad

Citrus Orzo Salad with Greek Yogurt

This delicious colorful warm citrus orzo salad is surprisingly easy for beautiful and delicious result! The bright presentation makes it the perfect dish to place at the center of the table and will be sure to impress your guests. Greek yogurt as the base perfectly complements the bright citrus and fresh mint flavors.

The recipe can be easily scaled up depending on how many people you are hosting. For larger groups, it is especially impressive to use a large shallow platter for serving, and for smaller groups you can either split up the recipe and assemble individual servings or use an appropriate-sized serving plate or shallow platter.

Recipe Notes:

Garlic: For an extra boost of flavor, try serving this with garlic Greek yogurt instead of plain. Simply blend 1 clove of garlic with the Greek yogurt in a food processor until smooth.

Vegan: You can easily make this recipe vegan by omitting the feta or substituting it with a non-dairy alternative, and by using a dairy-free yogurt in place of the Greek yogurt.

Gluten-Free: You can substitute the orzo with a gluten-free orzo, or with a different grain such as quinoa or brown rice and still get a delicious result!

Ingredients

  • 1 1/3 cup orzo
  • 2 cups plain Greek yogurt
  • 1 Tbsp olive oil
  • 1 tsp sea salt
  • 1 blood orange, segmented
  • 1 navel orange, segmented
  • 1 avocado, sliced
  • 2-3 radishes, thinly sliced
  • 1/4 cup feta, crumbled
  • 1 tsp crushed red pepper
  • 1/2 tsp black pepper
  • 1/2 cup fresh mint leaves
  • 1 lemon, cut in wedges

Directions

  1. Cook the orzo per package instructions.
  2. Spread Greek yogurt on the serving platter. Drizzle with olive oil and sprinkle with sea salt.
  3. Scoop the warm orzo into the middle of the Greek yogurt and carefully spread out, leaving about an inch of yogurt visible along the edges.
  4. Arrange the blood oranges, navel oranges, avocado, and radishes on top of the orzo. Sprinkle with feta, crushed red pepper flakes, and black pepper. Garnish with fresh mint leaves and top with a squeeze of lemon juice. Serve with additional lemon wedges.
