Peach and Tomato Summer Salad
Ingredients
- 2 cups mixed greens
- 1 large ripe peach, sliced
- 1 cup cherry or grape tomatoes, halved
- 1 cup plain Greek yogurt
- 1 cup fresh basil
- 1/4 cup pistachios, roughly chopped
- 1 Tbsp olive oil
- 1 Tbsp balsamic vinegar
- 2 tsp honey, optional
- kosher salt and pepper, to taste
Directions
- On a large plate or platter spread the mixed greens in an even layer and top with tomatoes and peach slices. Add the Greek yogurt in large dollops, then top with basil leaves. Drizzle olive oil, balsamic vinegar, and honey, if using. Sprinkle with pistachios and season with kosher salt and pepper.
