Fluffy waffles are the perfect cozy morning food. Nothing beats a relaxing weekend brunch with plenty of coffee and fluffy waffles topped with butter, powdered sugar, and maple syrup. These waffles are perfectly golden brown and crispy on the outside, and fluffy and soft on the inside. I like to make a large batch of waffles, then freezing them to pop in the toaster throughout the week for a quick breakfast or delicious afternoon treat. I’m not a big fan of really sweet breakfast items so waffles are my favorite with just enough sugar to make them delicious but not overwhelmingly sweet.
If you’re hosting a brunch gathering and preparing waffles for a group of people, keep waffles warm in a 200F oven. And if you have the oven on anyway, warm the plates so the waffles don’t cool off as quickly when you do serve them to your guests.
Recipe Notes:
Add-ins: You can make these waffles even more delicious by adding chocolate chips, blueberries, or bananas to the batter. If you want to make an assortment of flavors, simply sprinkle in the chocolate or fruit to the batter after you pour it in the waffle iron.
Fluffy Waffles
Ingredients
- 2 eggs
- 2 cups flour
- 1 3/4 cup milk or non-dairy milk, unsweetened
- 1/2 cup vegetable oil
- 1 Tbsp sugar
- 1 1/2 Tbsp baking powder
- 1 tsp vanilla extract
- 1/4 tsp kosher salt
Directions
- Preheat waffle iron.
- In a large bowl, beat eggs with a hand mixer until fluffy and airy.
- Add in remaining ingredients and mix on low until just combined.
- Spray or grease waffle iron. Pour 1 cup batter into the waffle iron, and cook until golden brown.
