This chia seed and almond butter granola delivers on everything I want in a granola – lots of crunchy clusters, not too sweet, and a hearty snack that will keep me going. The almond butter gives an extra boost of flavor and helps to create the delicious clusters that I think we can all agree are the best part of granola.
While I think the chia seeds, pepitas, and pecans create the perfect granola add-ins, this recipe can be easily modified with whatever seeds and nuts you have on hand. In addition to the honey already in the recipe, the granola can be sweetened up with by mixing in dried cranberries or cherries and chocolate chips once it’s baked and cooled.
My favorite way to enjoy this granola is with Greek yogurt and honey, but it’s also so delicious to eat on its own or with your favorite milk.
Chia Seed and Almond Butter Granola
Ingredients
- 3 cups rolled oats
- 1/4 cup chia seeds
- 1/4 cup pepitas
- 1/3 cup chopped pecans
- 1 Tbsp cinnamon
- 1/4 tsp kosher salt
- 1/3 cup almond butter
- 1/3 cup honey
- 1 Tbsp coconut oil
- 1 1/2 tsp vanilla
Directions
- Preheat oven to 300°F. Line a baking sheet with parchment paper.
- In a medium bowl, combine the oats, chia seeds, pepitas, pecans, cinnamon, and kosher salt.
- In a small saucepan or medium bowl in the microwave, melt the coconut oil, almond butter, honey, and vanilla. Stir to combine.
- Pour the liquid mixture over the dry mix and stir to coat.
- Spread the granola mixture in an even layer on the baking sheet.
- Baked for 15 minutes, then remove from oven and gently stir the granola being careful not to break up the clusters.
- Bake for an additional 15 minutes or until granola is golden brown.
- Allow the granola to cool and break into smaller pieces.
