These savory cheesy oat waffles are packed with flavor and are so satisfying. You can serve them with a variety of toppings to host a build your own waffle weekend brunch.

Dairy-Free: This recipe can be made dairy-free by substituting the cheese for dairy-free cheese, using non-dairy milk, and substituting non-dairy sour cream or yogurt for the sauce.

Savory Cheesy Oat Waffles
Ingredients
- 1 cup rolled oats
- 2 tsp baking powder
- 1/8 tsp salt
- 3/4 cup oat milk, unsweetened (or your preferred non-dairy or dairy milk)
- 1 large egg
- 1 Tbsp olive oil
- 1/4 cup Monterey jack cheese, shredded
- 1 Tbsp jalapeño, chopped plus a few slices for serving
- 1/4 cooked or canned black beans, drained
- 1/4 cup soy chorizo, optional
- 1/2 avocado, sliced for serving
- 1 Tbsp green onion, sliced for serving
- 2 Tbsp sour cream or plain Greek yogurt
- 2 tsp Cholula hot sauce, plus more for serving
- 2 Tbsp Cojita cheese, for serving
Directions
- Heat waffle maker.
- In a food processor or high speed blender (such as a Vitamix) blend oats into a fine flour. Mix in baking powder and salt.
- In a medium bowl, whisk together the milk, egg, and olive oil. Add dry mix and stir until just combined.
- Gently mix in shredded cheese and chopped jalapeños.
- Pour half of the batter at a time into the waffle maker.
- While the waffles are cooking, heat the black beans and chorizo, if using.
- Make the spicy creamy sauce by mixing together the sour cream (or yogurt) and hot sauce.
- Top each waffle with black beans, vegan chorizo, avocado, jalapeños, green onions, and Cojita cheese. Serve with hot sauce and spicy sour cream.
