Strawberry Puff Pastry Pop Tarts

These strawberry puff pastry pop tarts are perfect for an easy brunch pastry or celebratory birthday breakfast. Colorful sprinkles and bright frosting make these simple pastries extra fun!

While this recipe calls for strawberry jam, you can really use any flavor of jam you prefer or have on hand. If you can, try to match the color of the frosting to represent the flavor of jam you use!

I typically use Pillsbury Puff Pastry as is it often readily available (and vegan), but any brand of puff pastry will work. Be sure to thaw out the dough at least a few hours before you plan to make these. I’ve tried rushing the thawing process by putting the dough in the microwave and it never ends well. You can thaw dough in the refrigerator overnight, or per package instructions.

Ingredients

  • 1 sheet puff pastry, thawed
  • 1/4 cup strawberry jam
  • 1/2 cup powdered sugar
  • 1-2 drops, natural red food coloring
  • 1 Tbsp non-dairy milk or water

Directions

  1. Preheat the oven to 400F.
  2. Unfold the puff pastry dough on a lightly floured surface. Cut into 8 equal-sized rectangles.
  3. Divide the strawberry jam evenly between 4 of the rectangles of dough and spread into an even layer, leaving 1/2 inch of dough uncovered around the perimeter.
  4. Place each of the remaining 4 rectangles of dough over the top of a jam-covered rectangle, careful to align the edges.
  5. Using a fork, gently push down the edges of the dough to create a seal, creating a 1/4 inch seam around the edges.
  6. Bake for 30 minutes, until golden brown.
  7. Meanwhile, prepare the glaze by whisking together the powered sugar, food coloring, and non-dairy milk (or water).
  8. Allow the pastries to cool slightly before topping with the glaze. Decorate with sprinkles, optional.
