This board is packed with fresh summer flavors and elevated with creamy, rich burrata. It’s perfect for a backyard brunch or to accompany evening cocktails. Nothing beats fresh summer fruit like juicy peaches, sweet cherries, and plump blueberries. And the only time of year when you can get the best, most flavorful tomatoes is the perfect excuse to include them in as many meals as possible!
I love having a few cheese options on every board, but in this case I would totally approve of adding a second ball of burrata in place of the other cheeses. I have yet to meet someone who doesn’t love it!
Summer Burrata Board
Ingredients
- 4 oz burrata ball
- 2 oz Blue Cheese wedge
- 2 oz Manchego, thinly sliced into triangles
- 2 oz White Cheddar, broken into chunks
- 1 peach, sliced
- 1/2 cup blueberries
- 1 cup sweet cherries
- 1/2 cup cherry tomatoes
- 1 baguette or flatbread, toasted and sliced
- 2 Tbsp pine nuts, optional
- 2-3 fresh basil sprigs, for garnish
- 2 tsp olive oil
- salt and pepper, to taste
Directions
- On a medium platter or board, assemble cheeses. Try to spread out the different types of cheese so no cheeses are touching. Gently tear open the burrata and place near the center of the board. Drizzle with olive oil and season with salt and pepper.
- Fan out peach slices on opposite ends of the board.
- Slice and pit half of the cherries, leaving the rest whole. Place in 2-3 piles apart from each other on the board.
- Slice half of the tomatoes, leaving the rest whole. Place in 2-3 piles apart from each other on the board.
- Begin to fill in the remaining space with the blueberries.
- Tuck the sliced baguette or flatbread into any remaining large open spaces. Option to serve all or some of the bread on the side.
- Fill in any remaining small spaces with the pine nuts.
- Garnish with basil sprigs.
